Sydney Motorsport Park (Eastern Creek) is the main venue for almost every Sydney supercar experience. Multiple circuit configurations, full motorsport infrastructure, easy access from Sydney (~45 min from the CBD). If your booking just says "Sydney", it almost certainly means SMP.
A few experiences run at Pheasant Wood Circuit near Marulan, about 2 hours south of Sydney. Quieter, more rural feel, often cheaper. Worth it if you want to make a day of it.
Some specialist operators use private airstrips for high-speed straight-line experiences (top-speed runs in particular). These are less about cornering and more about "how fast does this thing actually go" — different proposition to a circuit lap.
